You also don't have to store pancake mix AND store ingredients you would have around your house anyhow. This simple pancake mix doesn't require eggs or milk, so you can make this when you are down to bare bones in the cabinets. If you want it ready to use, just mix the dry ingredients, put it in a Ziploc bag and put a note on it concerning butter and water amounts to be added.

You will need 1 cup all purpose flour, 1 tablespoon vanilla extract (optional)2 1/4 teaspoons baking powder, 1/4 teaspoon salt, 2 1/2 tablespoons butter or margarine and 3/4 cup water. Add 2 tablespoons of water or use one egg. Combine dry ingredients.Combine wet ingredients. Combine all ingredients. Heat oil in pan while allowing mixture to set and thicken. Cook as you would any other pancakes or waffles.
