Banana Blueberry Crock Pot Bread
I'm on a roll with the brad making because I don't want these fruits and vegetables to go to waste. Also, I am loving the idea of baking in the crock pot. So, I made some banana blueberry bread in the crock pot. Next I'll be making banana bread in cans followed by zuk bread in cans.

First off, know that the zuk bread came out much denser than the banana bread, so you might try mixing the recipes up a little bit if you plan to make the crock pot zucchini bread as well.

  • 1 cup mashed bananas 
  • 1/3 cup blueberries (note that you can just make banana bread without adding the blueberries and should be fine without adjusting the numbers)
  • 1/3 cup butter, oil, or applesauce (melt butter)
  • 1/2 cup sugar, brown sugar, or honey
  • 2 eggs (beaten until frothy)
  • 1 3/4 cup ap flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 cup hot water
  • 1 teaspoon nutmeg
Turn crock pot on high. Coat with nonstick substance of your choice. (I use butter, then sprinkle it with powdered sugar.)
Mix flour, sugar (unless you are using honey), salt, baking soda, and nutmeg. In a different bowl, mix eggs, honey if you are using it, butter (or applesauce or oil), and hot water, then add bananas. Combine wet mixture with dry mixture. Pour in crock pot, or crock pot insert pan. Cover with lid. Then, cover the lid with a towel. Bake for about 2 1/2 hours or until you can stick a toothpick in the middle and it come out clean.

If your child is like mine, just get out of the way before you say the words "it's done".
